Guacamole
Paisley and I made some yummy guacamole the other day, and to my surprise, she actually tasted it! She didn't like it, but I gave her credit for tasting it. She loves to help me in the kitchen, so whenever I'm whipping up a batch of something, I allow her to pull up a chair and help, provided that whatever we're making isn't hot. She's too young to be around a hot stove and oven. That will come in due time when I can trust her to be more careful.
Ingredients:
2 large, ripe avocados
1 tbs lemon or lime juice
1/4 cup mild chunky salsa
Directions:
Peel your avocados, and slice the flesh off of the seed. Add to a bowl, and mash with a fork until creamy.
Pour lemon juice, and salsa into the mixture, and stir well.
Get your favorite bag of tortilla chips, and dip away! I prefer Tostitos Artisian Blend Roasted Garlic and Black Bean Chips. Mmm Mmm Mmmmmm!
