This is a very easy way to help complete your daily food rainbow. Add a banana and some orange juice instead of milk, and you have the rainbow in one drink. I used what I had on hand today, and let me tell you, this was Ah-Mazing! You couldn't taste the veggies, because the tart flavor of the berries covered that up quite well. Paisley was begging for a second glass after she slurped down the first in a matter of 2 minutes. I used frozen berries instead of fresh. If you use frozen, you'll want to defrost them in the microwave for about 20 seconds first.
Ingredients:
1/2 cup blackberries
1/2 cup raspberries
1/2 cup mashed cooked cauliflower
1/2 cup cooked broccoli
1/2 cup milk
Cinnamon for garnish
Directions:
Cook the broccoli and cauliflower until it's soft enough to mash, toss into the blender, and puree on high for 1 minute.
Add berries and milk, blend on high for 2 minutes. Pour into a glass, and sprinkle cinnamon on top. Serve immediately. (Makes about 2 servings)
This is so yummy, I can guarantee there won't be any leftovers!
